Pizza Is In Our Blood.
George grew up in the restaurant business, literally. His mother ran multiple hot dog stands in New York City, and George was behind the counter before he was tall enough to see over it. With 21 cousins all working in or owning restaurants, the kitchen was never just a place to cook. It was where the family lived.
George has been an owner-operator in the restaurant industry since 2004. When he and Olesya decided to open Pizza Pie Co, it wasn’t a leap of faith. It was the next chapter in a story that started decades before.
In 2022 we found our space in Jarrell. We met our landlords Manny and Cherie, a husband and wife team themselves, and it felt like it was meant to be. Two families, one shared belief that this community deserved something better.
We Knew From Day One.
Our 48-hour fermented dough wasn’t something we discovered along the way. It was non-negotiable from the start. Proper flavor needs time to develop and we weren’t willing to rush it.
While other pizza chains use bleached, highly processed flour with anti-caking agents in their cheese and preservatives throughout, we don’t. Non-GMO unbleached flour. 100% real Wisconsin mozzarella. California vine-ripe tomatoes. No shortcuts. No compromises.
Olesya comes from her own long line of entrepreneurs dedicated to healthy, homegrown food. Her great-grandparents, grandparents, and parents ran vegetable stands and kept bees. That same belief runs through everything we do at Pizza Pie Co.

The Harshest Critics?
Our Own Kids.
We have three kids and they all have opinions. Our oldest son builds custom creations, heavy on the meats and vegetables, and orders gluten-free cauliflower crust for his girlfriend. Our oldest daughter is a committed meat lover with banana peppers added, no exceptions. Our youngest? Classic pepperoni. Simple. Perfect.
Both daughters have developed the habit of telling their classmates they are sick and tired of pizza. The reactions are priceless.
You will often find the whole family here, not at home watching TV or playing video games, but part of the day-to-day. When customers find out we are family-owned they are often surprised. Meeting the actual owners, seeing the kids involved, hearing the story, that is when it clicks.

Jarrell’s Table.
We call neighboring Georgetown home, but Pizza Pie Co belongs to this community. We are right off I-35 next to the Flying J, which means we feed a lot of people. Local families who have become regulars. Long-haul truck drivers who know they can count on a real meal. Travelers passing through who didn’t expect to find something this good at exit 275.
We are also proud to employ locals, many of them high schoolers taking their first steps into the workforce. We take that responsibility seriously. Pizza Pie Co is committed to providing a safe, healthy work environment where young people can learn, grow, and build confidence, because a first job shapes how you see work for the rest of your life.
We love the familiar faces. We love hearing people’s stories. We love being the kind of place where the owners know your order. That is what a real local restaurant feels like and that is exactly what we set out to build.
